Pork, Sauerkraut, and Cabbage with Dumplings

This is one of Paul's favorite recipes that his mom makes for New Year's day. They like more meat so that is why they add country ribs as well as spare ribs. Having the bone in really adds flavor. Serve with mashed potato. To be extra traditional, serve with black-eyed peas (beans) and corn as well.


1lb or so pork spare ribs
extra pork meat(country ribs, or pork roast.)
1-2 tsp. minced garlic
1 chopped onion
1 tsp. poultry seasoning (if you have it - usually includes sage, thyme, marjoram, etc)
1lb fresh sauerkraut OR one can 16oz plus juice 1 small green cabbage, shredded

Place the pork in a big pot and add enough water to cover the pork. Bring to boil...skim the foam off.

Add other ingredients bring to boil. Simmer until pork is tender. Usually leave it cook most of the day, gives the flavors more time to marry.


For Dumplings:

Use the directions from the Bisquick for dumplings.


2cups bisquick
2/3 cup milk

Mix, add parsley to the mix if desired.

Bring the pork mixture to a boil, drop the bisquick by the tablespoon full on the top.

Cook 10 min. with the lid off and 10 with the lid on.
