Recipes like Moms* Used to Make

Our Favorite Casserole

From Mom.  "Here is the exact recipe, though I have always used only 1 LB of hamburger."

When we were younger, we used to complain that "it's not our favorite casserole, it's your favorite casserole."  But now, living in England, Paul and I think it's one of "our favourite" casseroles.

2 lbs. ground chuck browned and drained
1 - 15 oz can tomato sauce
8 oz cottage cheese
1 - 8 oz package cream cheese, softened
1/2 cup sour cream
1/3 cup chopped onion
1 Tbls chopped green pepper (Mom always uses more)
4 cups noodles, cooked and drained

Mix cooked hamburger with tomato sauce and salt to taste.
Blend cottage cheese, sour cream and cream cheese together thoroughly. Add 
onion and green pepper. Mix in noodles.

In 2 qt casserole (greased or sprayed with Pam) dump noodle mixture and top 
with hamburger mixture. (Officially, you are supposed to layer it several 
times, but we always just did the 2.)

Bake at 300 for 1/2 hour. If made ahead and refrigerated, bake for 1 hour at 
325. Freezes well.

Mom regularly split it into 2 1.5 quart dishes and froze one of them.
