Chicken and Peppers

6 TBS butter
1 medium onion, cut into thin wedges
1 medium red bell pepper, cut into strips
1 medium yellow bell pepper, cut into strips
1 tsp finely chopped fresh garlic
6 (4 oz each) boneless skinless chicken breasts, cut into strips or cubes
1 TBS finely chopped fresh tarragon leaves OR 1 tsp dried tarragon
3/4 tsp salt
1/4 tsp coarsely ground pepper
8 oz uncooked dried vermicelli (extra thin spaghetti)
4 oz (1 cup) mozzarella Cheese, shredded
1/2 C freshly grated Parmesan cheese
3/4 C Half & Half

Melt butter in a large skillet until sizzling. Add garlic, onion, and peppers. Cook over medium high heat for 2-3 min, until tender but still crisp. Remove vegetables from the pan with a slotted spoon.


Add chicken, tarragon, salt, and pepper to the pan. Cook, stirring occassionaly until chicken is cooked (7-9 min).


Meanwhile, cook vermicelli as directed.


Add vegetables, cheeses, and half & half to the chicken. Cook until cheese is melted (3-5 min).


Add vermicelli and stir to coat.
